Great British Bake Off Episode 5 — Pies and Tarts
Episode 5 was pies and tarts: custard tarts (signature), mini pear pies (technical) and three-tiered pies (showstopper). Making a choice from episode 5 was a no-brainer. Three-tiered pies? Really? There was no way that was going to happen. The mini pear pie was beautiful, but a bit fussy for a Sunday afternoon in-between house and garden chores. The custard tart on the other hand (and a family-sized one at that) was right up my alley. I deferred to the head judge again and went down the Old Vanilla Road, but changed things up by doing a crème brûlée filling instead of a straight vanilla custard. I used this recipe from Epicurious, but for the tart shell I substituted Dorie Greenspan’s sweet tart dough. I love Dorie’s recipe. You can whiz it up in the food processor and don’t even have to roll it out or use pie weights — easy peasy. Even though it looks pretty fancy, the entire tart is pretty easy to make and pretty tasty too.
