Great British Bake Off Episode 2 — Biscuits

Episode 2’s bakes were all about biscuits — the English variety and not the American.  The choices were savory biscuits (signature), florentines (technical) and a 3-D biscuit scene (showstopper).  There was no way I was going to build a biscuit scene.  I’ve made savory shortbreads before (including a blue cheese and pecan version I usually pull out for Thanksgiving), but I’ve wanted to make homemade cheese crackers for a while now. So even though I’ve never made florentines I decided to go with the savory biscuits anyway.  I wasn’t 100% sure cheez-its would count as a savory English-style biscuit but decided to run with it.

I used this recipe from the internets and I think they turned out great.  I used a sharp white cheddar and although they weren’t exactly like store-bought cheez-its (which isn’t really a bad thing in my book), they were still addicting.  The head judge thought they could have been crispier (possibly user error for not baking them long enough), but I was ok with the softer texture. I would definitely make these again.
